Pan roasted Chicken with Italian accompaniments

Thought Italian food is only pizza and pasta???… Wrong!!!

With this easy recipe you will eat/impress like an Italian while you are in Durbs.

 

Pan roasted Chicken with Italian accompaniments

Ingredients

2cups water

1cup  milk

1cup polenta (yellow maize meal)

2 knobs butter

2tblspoon fresh cream

1pinch salt

2knobs gorgonzola cheese (optional)

2cups balsamic vinegar

1cup sugar

2tblspn olive oil

1 chicken breast

1pinch salt and pepper

2tblspn olive oil

5 cherry tomatoes

¼ aubergine aka brinjal/eggplant

1tblspn Italian herbs pesto

1pinch salt and pepper

Method

For soft polenta:

Bring water to boil then add milk simmer gently add your polenta(traditional Italian staple verry simillar to our very own mealie meal) cook for 30 min on very low heat stirring every 10min

Switch of the stove and add butter cream and gorgonzola if u are using it set aside.

Balsamic reduction:

Put balsamic vinegar and sugar on the moderate heat and boil for 10min

Chicken:

Pre-heat your oven to 180°c, season chicken breast with salt and pepper, heat up a little olive oil in the pan then cook your chicken skin side down for 1 minute flip it on the other side for another minute then back on skin side down then roast it for 8 minute

Vegetables:

Season your tomato and aubergine, heat up olive oil in the pan then place your aubergine for 2 minutes then add your tomatoes let them cook in the oven for 4 minutes while your aubergine is hot from oven marinate them with pesto.

Plate as desired.
